The blend is made up of beans from Castillo, Caturra and Colombia beans, collected from several different fincas. These varietals were planted at around 1,700 to 1,800 m.a.s.l. The caffeine was removed using organic solvents. The beans were washed in the traditional manner, meaning that they were harvested by hand at their peak ripeness— each cherry selected for its thickness—then de-pulped, fermented and washed again. Specifically, these beans were fermented in tanks for 20 to 22 hours and dried in raised beds for 18 to 20 days.
